A Guide to Easy Italian Cooking

Although there are literally thousands of different options available when it comes to easy Italian cooking recipes, there are a few in particular that you will want to try out.
Chicken Cacciatore
One tasty, easy Italian cooking recipe that you can try out is the chicken cacciatore. You only need a few ingredients and it takes just over a half an hour to prepare. For this easy Italian cooking recipes you will need 1 3-lb. chicken cut into pieces, 1 large onion chopped, 1 pound mushrooms sliced, 1 cup dry sherry wine, 1 cup chicken broth, 2 cups marinara sauce, ¼ cup olive oil, salt and pepper to taste, and 1 tablespoon chopped fresh parsley.
To prepare, you simply heat the olive oil in a large pan over medium heat, then add the chicken to the pan and cook until browned on all sides. Now add the onions and mushrooms, and cook for a few minutes, then drain the oil, add salt, pepper and wine. Now you cook this for about a minute, stirring a few times, then add marinara sauce and chicken broth.
Bring to a boil, reduce heat to low, simmer uncooked for about half an hour. Transfer the chicken to a serving dish, pour sauce over the chicken and sprinkle with parsley, then serve.
Caprese Salad
Another at Italian recipe is that is easy to prepare is this, for Caprese Salad. For it you need 2 pounds of ripe tomatoes sliced, 1 pound fresh mozzarella sliced thick, 4 tablespoons extra virgin olive oil, 5 to 8 basil leaves, salt and pepper to taste.
Now to make this recipe you just arrange the tomato slices on a platter, top each with a slice of mozzarella, and drizzle some extra virgin olive oil over the mozzarella and tomato. Now you tear the basil leaves into pieces with your hand and sprinkle them on top, season with salt and pepper and serve.
